Vinification takes place in stainless steel vats, with the temperature carefully controlled between 22º and 24ºC, for 16 days, followed by a 12-month aging period in stainless steel vats and 6 months in the bottle, ensuring maturity and balance.
Dona Sancha Red 2021 has a vibrant ruby color. On the nose, black fruit and jam stand out, complemented by vegetal notes typical of the Jaen variety. In the mouth, it surprises with its freshness, fine tannins and spicy nuances. Manual harvest for 12 kg boxes. Manual selection on a vibrating sorting table, followed by destemming and light crushing. Cold pre-fermentation maceration for 48 hours. Alcoholic fermentation takes place in temperature-controlled stainless steel vats. After pressing, the wine is transferred to 500L French oak barrels, where it undergoes malolactic fermentation and ages for another 10 months. Deep ruby color. Aroma dominated by fruit, ripe cherry and fresh plum, in perfect balance with light toasted notes from aging in wood. The fine, well-polished tannins give rise to a structured and velvety mouthfeel, marked by elegance. Long and juicy finish.
