A 100% Castelão, a disconcerting wine, which demonstrates the role of this variety in the ancient Alentejo strains. Freshness and purity. The grapes are selected on a sorting table, 30% whole bunch and 70% destemmed, falling by gravity into the vat. Spontaneous fermentation, 35-day aging and 18-month barrel aging. Fragile ruby garnet color. Very fine aroma, with hints of plum, tobacco and spices, on the palate the attack is medium bodied with good freshness. Manual Harvest. Total destemming. Skin maceration for 24 hours and fermentation in stainless steel tanks at temperatures around 21ºC. After fermentation, the wine aged in a cement tank, reminiscent of the old days of Carlos Lucas's enology. Times when cement was traditionally used. Medium concentration ruby color. Aroma of wild berries and some spices. A very fresh and young wine. It still maintains a freshness and a young aromatic component. In the mouth rustic and with an excellent acidity. A wine that represents very well the classic wines of the Dão. Contains sulfites.

After malolactic fermentation the wines were tranferred separately to new barrels (60%) and 4 years (40%) of French oak, where they trained for about 12 months until the final batch. After bottling, a temperature controlled stage of 15ºC is followed for 6 months in order to achieve the appropriate balance for its consumption. To preserve its great quality, it was bottled without treatment by the cold and without glue so that a slight deposit can form in the bottle. The elegance and balance of the Herdade do Peso Essência 2014 make this wine the perfect accompaniment to the tasty meat dishes of the rich Alentejo gastronomy.

Manual harvesting in 20 kg boxes. The grapes were destemmed and crushed, followed by cold skin contact for 18 hours. After pressing and static decanting, alcoholic fermentation took place in a stainless steel vat with controlled temperature (18 ºC) for 17 days. After the fermentation, it was aged on fine sludge for 3 months, and bâtonnage was carried out during the first month and a half. For almost 15 years, Quinta das Marias has produced 100% wine from the Encruzado variety. Encruzado is probably one of the least expressive Portuguese white varieties while young, expressing its full potential over several years in the bottle. Contains sulfites.
