The harvested grapes were selected from the vineyard and then introduced into the vats with 40% destemmed and 60% whole bunches, allowing the extraction of color and aroma compounds more smoothly during 2 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation in stainless steel. After aging 50% in used 3-year barrels of 400 L and 225L of French oak, and 50% in second-year barrels; where he stayed for 9 months. Filling and aging for 20 months in bottle. The Proibido wine originates in Vinhas Velhas between 40 and 80 years of age, coming from Vila Nova de Foz Côa. Small plots facing north or east between 250m and 500m altitude. All work is practically done by hand, without the use of herbicides or pesticides. When necessary, we till the land with the help of a work horse. We therefore respect what the vineyard gives us, and we try to make the transformation of the grapes into wine as natural as possible. gentle maceration and low temperature fermentation. Aging 15 months in used barrels. This wine presents a well-marked black fruit on the nose with great intensity, toasted notes and spices. A well-balanced wine in the mouth, with a very long, persistent body and well-file tannins. Contains sulfites.
Quinta do Monte Xisto Magnum Red

The grapes were harvested by hand and transported to the cellar in 20 kg boxes. They were vinified in mills with treading on foot. Fermentation took place over 6 days in the mill with indigenous yeasts. This followed an 18-month stage in 600 liter kites. Intense ruby color, we bring the nose closer to the glass and the aroma is gradually discovered. First, the cistus, juniper, stands out, progressing to a universe of freshness seasoned by aromatic herbs. It is then alive and full of fruit. In the mouth it attacks with volume, a soft sphere surrounded by soft tannins slides for a long and fresh finish. Contains sulfites.
