Careful selection of grapes on a sorting mat, followed by total destemming, crushing and transport by gravity to stainless steel fermentation tanks. Pre-fermentative maceration at low temperature for 48 hours, followed by alcoholic fermentation at controlled temperatures between 25-27ºC. In view of the high qualitative potential demonstrated, an additional period of skin maceration was followed, enhancing the structure, depth and complexity of the wine, after which it was transferred to 225l oak barrels. Aged for 18 months in 90% French and 10% American oak barrels. Menin Douro’s New Legacy Reserva is a wine that has an intense ruby color, very fine aromas of sour cherry, cassis and dark chocolate, where at the same time it manifests balsamic and cherry notes, nutmeg and peppermint. The low productivity imposed by the land will act as a stimulus to the quality of the grapes that form, promoting an ideal concentration of acids. organics, sugars and phenolic compounds. Fermentation in 500 liter French oak barrels with 50% stem. Aging for 10 months in the same barrels where it fermented. Sharing moments, ideas and experiences with other winemakers or people related to wine is something that Susana Esteban always liked and encouraged. And for this reason he decided to create the Sidecar brand. Every year the producer and winemaker will challenge a friend to make a wine in his cellar in Mora. They will decide how to interpret the fantastic vineyards of the region and as the project's mentor says, they will be driving the bike! For the second edition of the Sidecar invited two friends, the oenologist Filipa Pato and the sommelier William Wouters. An interesting trio, and that above all, makes sense! It decided to join a field blend of traditional varieties of Serra de São Mamede, a cooler and higher altitude zone of the Alentejo, with a Berry of a century-old vineyard of Bairrada, zone influenced by the Atlantic. The wines fermented and stamped both in amphora.
