Cellar for at least 12 months on the lees. Light pink color. Aroma of red fruits with a predominance of cherry and notes of dried vegetables. The palate is smooth, with good acidity and volume; Fresh and creamy with a long finish. Contains sulfites.

Total destemming, soft pressing, natural static settling. Alcoholic fermentation at 18ºC. Foaming by the classical method. Stage for 9 months in the basement and 1 month after degorgement. Crystalline appearance with fine and persistent bubble, defined pink color, intense aroma of fresh red fruits and jam. Fruity flavor, moderate freshness, pleasant volume in the mouth and followed by an elegant mousse and remarkable persistence. Contains sulfites.

Harvested early with 11.2% probable alcohol and total acidity at 6.5. Light pressing, static decantation for 48 hours at 8ºC, fermentation at 15ºC for 3 weeks. Stage for 12 months in contact with the yeasts. Citrine color, fine bubble, citrus aroma with some toasted notes. Full-bodied, smooth, creamy flavor with buttery nuances. Contains sulfites.
