This sparkling wine remains in the cellar for 48 long months at a constant temperature of 12ºC. The Chardonnay shows refinement and freshness, the Arinto with exquisite acidity highlights the potential of the sandy-clay soil of Vinha das Andorinhas located in Pedreira de Vilarinho. To obtain the structure and preservation potential essential to this exceptional Elpídio Superior Sparkling Wine, only the juices from pressing the whole grape core are used, after separating the first and last extractions. The grapes are left to ferment for the first time, transforming the juice into base wine. Remaining in the tank allows the development of the complexity of the aromas and the structure of Elpídio Superior Sparkling Wine. The elegance and delicacy of the aroma suggest soft notes of white-fleshed fruits, reminiscent of pear and apple, with light citrus fruit and some toast. The Alvarinho grapes used in the Winemaking of the Sparkling Soalheiro are selected in the vines with a lower sugar concentration and fresh acidity implanted in soil of granitic origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a series of mountain ranges that allow a perfect marriage between rainfall, temperature and the number of hours of sunshine required to better ripen the grapes of the Alvarinho variety. A perfect and consistent harvest. The summer months and specifically August had moderate temperatures during the day and cold nights that favored a slow maturation and the concentration of the aromas in the grapes. The early September dry season contributed to a perfect balance in Alvarinho. By 2016, flowering occurred two weeks later than the last harvest due to little rainfall in winter. This year we started harvesting in the first week of September to maintain the refreshing profile characteristic of Soalheiro. It has citrine yellow color, fine and persistent bubble. The aroma reveals the fruit of the Alvarinho variety, denoting a good balance between acidity and alcohol. The flavor has persistence and complexity. Contains sulfites.

The permanence in the basement, the low and constant temperature for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho variety in a perspective of greater complexity and less fruit. The elaboration of a sparkling wine from the Alvarinho grape variety demands a careful selection of the grapes. Our tradition was based on the neutral fermentation in stainless steel to obtain the base wine with more fruit intensity. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us. It has an intense yellow color, a fine, persistent bubble. The aroma reveals tertiary and vanilla aroma, denoting a good balance between acidity and alcohol.
