The Favaios 1980 is the type of wine that vinifies only in the years in which the grapes have demonstrated to have an exceptional quality. After careful selection of the best Favaios grapes they were macerated and fermented as they were traditionally in the region. The alcoholic fermentation is very short, and soon after the ascent of the blanket is bleeding of most of the wort and application of brandy.
