Total destemming and pressing. Selection of the grape must and cooling at low temperatures. Fermentation only in stainless steel vats, with temperatures rounding the 16ºC for 3 weeks Traditional method of fermentation in-bottle, in a cool cellar, for 18 months, followed by the degorgement. Slightly salmon colour, aromatic with mineral notes, dried fruit and citrus. Good acidity, fine and delicate bubble and creaminess on the long finish. Goes well with all kinds of salads, white meat, sushi and grilled fish. Contain sulfites.

Fermentation in stainless steel and aging in used French oak barrels on fine lees for 8 months. A wine full of character, which reveals from the first contact a fresh breath (grapefruit, lime, mint) well matched with fine smoked notes. In tasting, it shows a lot of freshness, a lively acidity that perfectly harmonizes with the creamy and tasty side, which lasts in the mouth.
Veuve Clicquot La Grande Dame Brut White
Held up to the light, La Grande Dame 2015 reveals a beautiful golden robe that shines brightly. This vintage, while elegant and precise, offers fresh minerality with light floral notes of jasmine and acacia on the nose, which evolve into fruity notes of pear and clementine. The palate with a deliciously subtle and silky texture.
Altano DOC White
With a bright yellow straw color, this wine reveals expressive aromas of passion fruit and pineapple with a subtle note of vanilla. Exuberant and fresh in the mouth, it presents precise citrus flavors, conjugated with green apple and a touch of melon. The set is cut by a very fresh acidity. Produced mostly from grapes from Quinta da Fonte Branca, near Lamego and belonging to the Symington family.

Mechanical harvest. Partial stalking. Fermentation in a mill with whole berries. Step on foot. Controlled temperatures between 18º and 25º, maceration after fermentation of 8 days. Aging for 6 months in used French oak barrels of 400L. Orange color, fresh notes of mandarin, mint and cinnamon. Soft tannins, medium body. Good freshness and minerality. Contains Sulfites.
Herdade de São Miguel Colheita Selecionada White
Manual harvest. Total stalking. Pre-fermentative maceration for 8 to 12 hours. Vacuum press, fermentation at controlled temperatures (15ºC to 18ºC) in stainless steel vats (50%) and in 400L barrels for 20 to 30 days. Aging for 50% for 4 months in French oak barrels. Citrus yellow color, complex aroma of tropical fruits and white flowers with notes of butter and coconut. Fresh attack, fine acidity and sharp body. Quite mineral and harmonious. Long finish. Contains Sulfites.
