The grapes were harvested, after a rigorous selection in the vineyard and in the cellar, the grapes were pressed with the whole bunch, under low pressure. The must fermented 80% in used 500L French oak barrels (must from old vines) and 20% in stainless steel vats (must from new vines), remaining for 8 months. Of greenish citrine color, it presents a fresh aroma denoting complexity. It has an intense mineral character, which gives it freshness, together with notes of orchard fruit – white plum, citrus – lime zest, light aroma of smoke and spices. Frank in the mouth is mineral, enveloping with acidity tempered by the light greasiness provided by the partial malolactic produced in barrels. Contains sulfites.

Very smooth pressing of whole destemmed grapes. Cold clarification for a long period. Fermentation in used 400 liter French oak barrels. Harvest by hand. Na old vineyard with 40 years old. 100% stems. Maceration in lagar. Fermentation occurred naturally, under indigenous yeast for 15 days with light stomping to allow good color extraction. In the end of the fermentation, the grape must was transferred to a small stainless steel vat where it remained until bottling. All process was led without the least human intervention, with minimum quantities of external products, from the vineyard to the finish line, the bottling. Medium ruby color. Red fruits aroma combined with some spices like black pepper. A fresh and young wine, true to self, with structure and exuberant finish. This wine is quite versatile, combining the wild and rustic side without oak influence, with the fresh fruit and the wonderful acidity from the terroir. Pairs perfectly with roasted meat dishes, dried nuts, mushroom and soft cheeses. Contains Sulfites.
Château Les Justices Sauternes White

Sauternes, 40 miles south of Bordeaux city, is a village famous for its high-quality sweet wines. The Sauternes of Chateau Les Justices have always been highly appreciated by the best French restaurant for the high quality regularly maintained over time, Sauternes is a very long-lived. The vineyards are located in the municipality of Preignac, ideal environment for the development of noble rot (Botrytis Cincerrea), the vines have an average age of 25 years. The soil is stony (Graves) mixed with sand characterized by a clay part; subsoil consists of a layer clay-limestone which rests on the rock. The harvest is manual. Fermentation takes place in temperature controlled stainless steel tanks and lasts about three weeks. Followed by aging in vat at first, then in new oak barrels for 12/18 months.
