The harvest took place in the last week of September. The grapes were harvested manually, to small boxes of 18kg. The alcoholic fermentation lasted about 15 days, with gentle maceration for a good extraction of aromas and color. After fermentation, it was transferred to French oak barrels where it remained for 12 months. After bottling the wine remained about 6 months in a fresh cellar before being released to the market. It presents an intense ruby color, aromas of forest fruits and notes of ripe plum, with an excellent structure and a long and expressive finish. Contains Sulfites.

Fermentation in stainless steel vats, with maceration at a controlled temperature of 26-28ºC. Aging in new French oak casks for 14 months. A beautiful wine with aromas of ripe fruit such as blackberry and black cherry, as well as a freshness given by wild aromas. On the palate it shows good acidity, with well present but ripe tannins, polished and well harmonized with the toast provided by the wooden stage. Ends long and with a slight and bitter seductive. These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. Produced from the carefully selected vine varieties, Alicante Bouschet eTincadeira, planted in the older vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. The grapes are then fermented separately in stainless steel vats and French oak vats, at a temperature of 27 ° C, followed by 15 day maceration. This wine aged for 15 months in new French oak barrels and 12 months in the bottle. Contains Sulfites.
