Tiago Cabaço Old Vineyards Red with Case

Manual harvesting for 15kg boxes. Total de-stemming with slight crushing after selecting the grapes. Fermentation in stainless steel vats at controlled temperatures. Partial aging (60%) for 12 months in used French oak barrels. Notes with floral notes and bergamot from Touriga Nacional and ripe red fruit, to which are added the light and toasted notes of the barrel. Mouth with good acidity, volume and present but soft tannins.

Vinified from grapes from selected plots. After maturation tests, the grapes were harvested at their optimum ripeness point. After total stemming and gentle crushing, maceration and fermentation took place, with pumping over in stainless steel vats at a controlled temperature of 28ºC, for around 12 days. We thus obtained intense, elegant wines with an expression of the place. After malolactic fermentation, the wines aged in French oak barrels for around 12 months. It was subjected to light filtration before bottling. In order to preserve its quality, it was bottled without cold stabilization treatment, which may cause deposits to form during aging in the bottle. Bright red color. Attractive aroma with notes of currant, black plum and mustard seeds. In the mouth it is fresh, very complete and elegant. It has present and fine tannins, very well integrated. Contains sulfites.

This organic wine is a true tribute to Nature. With a minimal human intervention we intend to express in a wine all the Alentejo ... the colors, the flavors, the aromas, the emotions, the rich landscape, historical, social ... with the greatest respect for the ecosystem. From the varieties Tincadeira, Aragonez and Cabernet Sauvignon an authentic and rich lot was produced. Aromatically fine, exuberant, seductive ... where they stand out blackberries, currants, plums that prove to be very mature, very greasy. in the mouth has volume, structure, intensity, long ends with a good persistence.
