The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

Fermentation takes place in truncated conical stainless steel vats, preceded by a cold maceration for 24 to 48 hours. After pressing, the wine undergoes malolactic fermentation in stainless steel and then ages in 300 liter French oak barrels for a period of 12 months. After designing the batch, it ages in the bottle for two years before being released on the market. Aroma of black fruits in jam, spice, flowers and mint. The notes of toast and dark chocolate accentuate the complexity of the wine on the nose. In the mouth it is soft, fresh, full and elegant. The finish is long, shows an enormous concentration of smooth tannins and a hint of Vidigueira. Long and persistent that leaves a fine and delicate essence of all its aromas and flavors.

The harvested grapes were selected from the vineyard and then introduced into the vats with 40% destemmed and 60% whole bunches, allowing the extraction of color and aroma compounds more smoothly during 2 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation in stainless steel. After aging 50% in used 3-year barrels of 400 L and 225L of French oak, and 50% in second-year barrels; where he stayed for 9 months. Filling and aging for 20 months in bottle. Wine with a ruby-garnet color, aromas of rockrose, red fruits with evolution to balsamic notes, light aroma of cedar, highlighting a spicy character. In the mouth velvety, long, fresh and careful.
