The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

This wine was created with minimal intervention, in order to respect the qualitative potential of the exceptional grapes that originated it, as well as respecting the classicism of white wines from Dão and those from Caves São João, in particular. For this reason, aging on fine lees took place in wooden vases, already heavily winered, for a period of 6 months, having been bottled without stabilization, after a very coarse filtration. With a straw yellow color and a very complex aroma, with evident mineral notes (flint and flint), phosphorus, spices, dry vegetable and very faint fruity notes and dried flowers. The wood notes are perfectly integrated, being practically imperceptible. It has great freshness and gustatory volume, however it is also elegant and quite persistent, characteristics that give it excellent gastronomic aptitude and for ageing. .

Produced on the same slope (North exposure) as Dust, has with this much in common. But as it is mostly produced from younger vines it has a lighter and more relaxed character. With this Powder of Dust we tried to make a personalized wine, with an expressive aroma and with a depth and freshness that characterize our wines. The harvest is made in mid-August, with a total destemming of the grapes. Fermentation occurs in stainless steel vats, with controlled temperature, followed by a skin maceration for 1 week, without any mechanical extraction. The wine was aged for 6 months in used French oak barrels and 6 months in bottle.
