The wine Scala Coeli (whcih in Latin means “stairway to heaven”) owes its name to the Monastery of Santa Maria Scala Coeli. commonly known as Carthusian Monastery, where the Carhusian monks remain in silence and prayer. It results from the best vinifications of each year of less traditional grape varieties in the Alentejo, was produced for the first time, in the harvest of 2008. Contains Sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it is very complex, between notes of wild fruit, “sous-bois”, black fruit and balsamic freshness. In the mouth, it presents very fine and polished tannins that provide structure and finesse at the same time.

Touriga Nacional is the international icon of Portuguese grape varieties originating in the region where it best expresses itself, the Dão. In Taboadella, it is a grape that shines on the ground, and this is a great example of its natural acidity with this exceptional terroir allowing us to detect the violets that populate the aroma in our memory in complementarity with the notes of altitude, the black spice and the quartzitic aroma of wet granite, in surprising complexity. Organic Wine, 100% manual vintage, for small perforated boxes. Choice table reception. Stalk and crush. Cold maceration for 48 hours. Alcoholic fermentation for 3 weeks with temperature control. It aged for 15 months in new 300 L French oak barrels. Intense and very fresh aroma, showing well the cool summer nights at altitude in the Douro Superior, marked by violets, black and red fruits very characteristic of the grapes that gave rise to it, in balance with very subtle notes of French barrel. In the mouth, freshness, acidity and live tannins denote the soil and climate and provide longevity, then all the notes of aroma are felt in an elegant and long set.
Quinta de Chocapalha Red

The grapes, previously destemmed, underwent a pre-fermentative maceration at low temperatures for 12 hours. The alcoholic fermentation was done in mills, with temperature control, not exceeding 27ºC, during 10 days, with the use of robot to step. The wine aged for 18 months in second and third use French oak barrels. Deep color of violet tonally, with good concentration in the nose. Rich in aroma, with notes of ripe black fruit and spices combined with floral notes. In the mouth it looks elegant and fresh, with an excellent tannins-acidity combination, and a long, smooth and elegant finish.

Touriga Nacional, full and voluminous with the sweet and structured Tinta Roriz and the complex aroma of Jaen, growing on slopes at an altitude between 350 and 400 meters. The vine is grown within an integrated protection program. Infestation control is achieved through soil movement. The harvest is done by hand, grape variety by variety, when the ideal ripening point is reached, normally between the second half of September and the first half of October. The harvest is collected in small 10 kg boxes. These wines are obtained after fermentation at a controlled temperature, in order to preserve all their aromatic elegance, in large wooden barrels and stainless steel tanks, for 20 days. The wine is produced by malolactic fermentation in French oak barrels and has a subsequent maturation period of 18 months to enhance its structure and complexity. Quinta de Lemos Dona Santana is a wine made from four grape varieties from the Dão region, with notes of jelly and cocoa. Ripe, creamy and elegant dark fruits Sweet and attractive finish. .
