Manual harvest. Manual choice of curls. Destemming without crushing the berries. The two varieties fermented together in used 500L French oak barrels where they were subjected to gentle pigeages. After an aging period of 19 months in used 500L barrels, we carry out a light gluing and subsequent bottling. The wine rested for 1 year before being marketed. Open grenat color, fragrant, exuberant aroma, a combination of aromas of red fruits and spices. Smooth attack, very silky tannins, very light with excellent freshness. Elegant. It has a remarkable balance. It ends with its aromatic side. Contains sulfites.

Cercial harvested in the first week of September, after a prolonged period of rains. while the Arinto was harvested in the 3rd week of October. Total fermentation and 7 months stage in new and used 400 liter barrels. Good connection between fruit and wood, all in a register of good balance. Grapes are harvested by hand into small boxes before being refrigerated and then pressed into a pneumatic press without destemming. Cold decanting, followed by fermentation in temperature-controlled French oak barrels and regular bottling up to one month before bottling. Aging 11 months in used French oak barrels, with regular bâtonnage and 6 months in bottle. It is a wine of extraordinary rarity, with incredible precision and definition, an expectation of longevity of 25 or more years, and immediately established itself as a cult white wine.
