The grapes were harvested, after a rigorous selection in the vineyard and in the cellar, the grapes were pressed with the whole bunch, under low pressure. The must fermented 80% in used 500L French oak barrels (must from old vines) and 20% in stainless steel vats (must from new vines), remaining for 8 months. Of greenish citrine color, it presents a fresh aroma denoting complexity. It has an intense mineral character, which gives it freshness, together with notes of orchard fruit – white plum, citrus – lime zest, light aroma of smoke and spices. Frank in the mouth is mineral, enveloping with acidity tempered by the light greasiness provided by the partial malolactic produced in barrels. Contains sulfites.

The different harvested plots were vinified separately where the grapes passed on a selection mat, subsequently undergoing destemming and crushing, being moved by gravity to stainless steel fermentation tanks. Pre-fermentative maceration was carried out at low temperatures ranging from 24 to 48 hours depending on the variety, followed by alcoholic fermentation at temperatures between 25-27ºC. After the alcoholic and malolactic fermentation in stainless steel tanks, the wine was transferred to 225L oak barrels. Menin Reserva Red is a wine that has a ruby color, a full aroma of fresh fruit, with notes of wild red fruits, blackberries, plum, in perfect harmony with the spicy nuances conferred by the aging in barrel. In the mouth it has a solid structure, with lively but polished tannins and great freshness and balance.

Natural fermentation with indigenous yeasts in cement vats without temperature control, followed by malolactic fermentation in barrels. Aging for 18 months in French oak barrels, followed by aging in bottle for 36 months. Impactful, explosion of licorice / “liquorice”, black fruits, and spices, in harmony with very discreet notes of barrel. Organic Wine, 100% manual vintage, for small perforated boxes. Choice table reception. Stalk and crush. Cold maceration for 48 hours. Alcoholic fermentation for 3 weeks with temperature control. It aged for 15 months in new 300 L French oak barrels. Intense and very fresh aroma, showing well the cool summer nights at altitude in the Douro Superior, marked by violets, black and red fruits very characteristic of the grapes that gave rise to it, in balance with very subtle notes of French barrel. In the mouth, freshness, acidity and live tannins denote the soil and climate and provide longevity, then all the notes of aroma are felt in an elegant and long set.

With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement. Aroma fine and elegant, suggesting black fruits, compote and white chocolate. Contains Sulfites.
Filipa Pato Nossa Missão Red

Missão, is a small centennial vineyard of 0.57 hectares with pre-phylloxeric vines of over 100 years. Production is limited to only 500 bottles and 30 magnums. It is located on a gentle slope with east orientation, the soil is of limestone origin from the Lower Jurassic era, with reddish clay. The cultivation and harvesting are totally manual and the sorting of the grapes is done in the vineyard itself. A part of the grapes are destemmed, and the percentage of whole grapes depends on the conditions of each harvest. Fermentation takes place slowly for about 3 weeks, with indigenous yeasts, the flow is smooth and long. After alcoholic fermentation, the wine drains by gravity and the masses are pressed. The whole fills only a traditional 500 liter kite where it stays for 18 months in our basement. The "Missão" is a remarkable wine for its pure expression of Berry. While young, the aromas resemble violet and strawberry. After 7-9 years, the aromas become more complex with a lot of energy and concentration. The tannins, although very alive, are soft, lively acidity, long finish, irreverent and elegant. It is a wine with long aging potential. Contains Sulfites.
