The vinification of this exceptional white wine begins with careful pre-fermentation maceration after stemming, lasting between 4 and 6 hours, followed by gentle pressing. Natural decantation, carried out cold for 48 hours, prepares the wine for fermentation at controlled temperatures, maintained below 17ºC, ensuring the preservation of its unique characteristics.
Made from the Arinto, Antão Vaz and Roupeiro grape varieties, Quinta dos Cardeais Grande Reserva White reveals an aromatic bouquet of exceptional precision, where the vegetal notes mix harmoniously with the country floral, nuances of shaved stone and lemon leaf. On the palate, it is creamy and elegant, marked by a balanced citrus cut that highlights its width and juiciness. The grapes were harvested manually and transported in small boxes to the cellar where they were stored in a cold chamber at 3°C for 24 hours. They were then selected and gently pressed. The must was cold decanted (10°C) and then fermented in French oak barrels. After alcoholic fermentation, the wine aged for 6 months in barrels with battonage and sur lie. Crystalline wine, with greenish yellow tones, fruity aroma with notes of yellow plum and pineapple. In the mouth, it has an excellent volume, dense but with good refreshing acidity.

Transport in 20 kg boxes, destemming with crushing, pre-fermentation maceration for 48 hours, inoculation followed by fermentation in stainless steel vats below 24ºC. Good volume in the mouth and discreet but present acidity. Contains Sulfites.
