In the cellar they are unloaded and immediately destemmed and crushed, followed by skin maceration (about 12 hours) in order to extract all the aromatic compounds from the film. Subsequently, the grapes are pressed with oxidation protections from which the tear must is extracted which, after static clarification, starts the fermentation in stainless steel tanks at low temperatures (15/16º) and is then transferred to French oak half barrels.
