The grapes were harvested very early, before the painter, to ensure acidity and natural freshness. They were manually harvested into small boxes in order to preserve their quality. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Following selection on a mat of choice, 30% destemmed and 70% whole bunches were introduced into the vat, allowing the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation. in stainless steel. Some of the best Moscatel grapes from the Favaios plateau are selected and harvested by hand.
