Fermentation in stainless steel vats, with maceration at a controlled temperature of 26-28ºC. Aging in new French oak casks for 14 months. A beautiful wine with aromas of ripe fruit such as blackberry and black cherry, as well as a freshness given by wild aromas. On the palate it shows good acidity, with well present but ripe tannins, polished and well harmonized with the toast provided by the wooden stage. Ends long and with a slight and bitter seductive. Contains Sulfites.

Chão dos Eremitas Os Paulistas Red

The Paulistas, name given to the Hermits of the order of São Paulo who made their wine in this place for so long, that this date was lost in the memories. However, the Papal Bull of 1397 exempted “Os Paulistas” from taxes on their vineyards, demonstrating the importance of this location. The place is special and receives two streams that bring water from Serra D’Ossa and keep the water nearby and the soil fresh, with no need for watering for the good development of the grapes. The grapes, also from another time, planted in 1970, Tinta Carvalha, Moreto, Castelão, Alfrocheiro and Trincadeira, demonstrate that there was another Alentejo, without irrigation and without improving varieties. An Alentejo worth recovering, this is our tribute to the Paulistas. Nocturnal manual harvest, selected on a sorting table, 30% whole bunch and 70% destemmed, falling by gravity into the vat. Spontaneous fermentation and maceration between 25 and 40 days, followed by an 18-month aging in French oak barrels with more than three years. Ruby color with some violet touches, medium concentration. On the nose, lots of red forest fruit, some undergrowth. Fresh attack, good fruit with hints of pomegranate. Very thin, long and with structure.

The wine was vinified in conical stem vats equipped with temperature control (25-28 ºC). Aging for 14 months in French oak barrels of 225 liters. Beautiful color with a vibrant, elegant and fresh fruit aroma with notes of wild berries and currant. Well cut and polished in the mouth, has a nice structure with a good volume of mouth some notes of very well integrated wood. It is an enveloping wine, but at the same time with a freshness and purity of fruit of note, which give it a charm of its own. It is ready to be consumed but has a good potential for bottle aging. In 2015 we enjoyed long and slow maturations that our older strains and our best plots have taken advantage of to provide grapes with an exemplary balance between acidity and tannins. The two grape varieties that benefited most with the exceptional goodness of nature were Syrah and Alicante Bouschet, providing grapes in perfect maturity. With raw material so good we prefer to work them little, letting the grapes speak for themselves. That's why we did little more than one walk on our wineries, according to the most traditional methods of the region, followed by a stage in new barrels and barrels of second year of French oak, letting the wine express itself in the purest form .
Very fleshy red color. Tense and closed, concentrated and powerful, floral and fruity, it ends with some earthy notes that add complexity. Silky and velvety in texture, it is an intense and structured red, vigorous but not aggressive, complex and elegant, fresh finish and great guarding potential.
