The "Premium" line of Quinta da Pellada wines has long been an icon of Dão wines. For Álvaro Castro, the viticulture and the characteristics of each year are that shape each harvest, however, dedication and alertness are essential so that nature can be "protected", in order to exercise the minimum of human intervention in the elaboration of each one of their wines. This field blend, which joins castes from Quinta da Pellada and Casa da Passarella, has been staging for 14 months in allier oak casks. Intense ruby color, very concentrated in the aroma, modern and vigorous style. In the mouth, compote and game notes in which the final toasted notes leave a pleasant memory. Tannins fine and of good quality, everything very well proportioned, giving it a great complexity. Contains Sulfites.

Fermentation in stainless steel. Staged 50% of the lot in stainless steel; 25% in new French oak barrels and 25% in second-year French oak barrels for 11 months. Vivid red color, almost opaque. The nose is rich, fresh and quite complex, where the fruity character of well-ripe grapes predominates. The discreet and well integrated wood in the wine, contributes to its complexity and aromatic enrichment. In the mouth it is intense, full of aromatic notes to very ripe red fruits, with balanced acidity and soft but present tannins. It is a very well structured wine, quite tasty, that presents a smooth and very nice finish. Contains Sulfites.

After harvest, the grapes are collected in the cellar and sent to the cold rooms, where the temperature is controlled up to 10oC for 12 hours. The bunches are then stalked and the grapes broken. Partially fermented in frustoconical stainless steel tanks and French oak vats. After the alcoholic and malolactic fermentation, the stage partially runs for 7 months in French oak barrels of the Seguin Moreau brand (medium - fine grain), until bottling. The bottle stage occurs for at least 12 months. Contains Sulfites.

The grapes are chilled and then pressed in a pneumatic press. Cold decanting, followed by fermentation in temperature-controlled stainless steel barrels and vats with regular buffering up to one month before bottling. Aging 6 months in new and used French oak barrels (30% of wine) and stainless steel vats (70%), with regular bâtonnage. It is a rich and concentrated white wine, but very precisely in citrus fruit and notorious minerality. Contains Sulfites.
