After harvest, the grapes are collected in the cellar and sent to the cold rooms, where the temperature is controlled up to 10oC for 12 hours. The bunches are then stalked and the grapes broken. Partially fermented in frustoconical stainless steel tanks and French oak vats. After the alcoholic and malolactic fermentation, the stage partially runs for 7 months in French oak barrels of the Seguin Moreau brand (medium – fine grain), until bottling. The bottle stage occurs for at least 12 months. Contains Sulfites.

It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Soalheiro come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. The bottling takes place after the batonage and the stage in the fine lees. Citrine yellow color, aroma with the profile restrained and elegant with mineral notes and dry finish.
