Gentle crushing of the grapes with total destemming, maceration and fermentation in small capacity stainless steel vats, with selected yeasts, temperature control 28º – 30ºC, gentle pumping over.

Casa da Passarella Abanico Reserva 3x Red
Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration. Contains Sulfites.
Quinta dos Roques Touriga Nacional Red
Of dark, bright color, the bouquet, characteristic of this variety, has notes of violets, pine needles and red fruits. Oak and chocolate notes given by the oak are present and well balanced with the fruit. In the mouth it is very generous and concentrated with the astringency and firm tannins characteristic of its youth, predicting a remarkable prolonged aging. Contains Sulfites.
Vinha Othon Reserva Red
The personality of a great wine is revealed in its unique and authentic essence of the terroir where it was created. The Vinha Othon Reserva clearly demonstrates the magnitude of the Dão of Quinta da Vinha Paz. It has a bright deep red color with tiled nuances. On the nose, it expresses notes of high aromatic complexity with notes of ripe red fruit, rosemary, pine needles and fine spices combined with expressions of dried fruit from the Quinta. In the mouth it is very velvety, soft with the presence of round, complex tannins with notes of mineral freshness. It demonstrates a personalized sensorial approach, defining an elegant and long aftertaste with a high bouquet. It should be served at a temperature of 18 º C with game dishes and cheeses. Contains sulfites.
Casa de Santar Vinha dos Amores Touriga Nacional Red
Produced from a single breed, Touriga Nacional. Of intense garnet color with notorious violaceous tones. Aroma intense and complex, the fruits of the forest, ripe red fruits and jelly are well known. It also has floral notes and notes of spices. In the mouth it is fruity, soft, well structured and with noticeable final persistence. Crushing with total destemming, prolonged and smooth skin maceration, alcoholic fermentation at 26ºC. 18 months in French oak barrels and 6 months in bottle. Contains Sulfites.
