Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

The grapes were manually harvested into 25kg boxes and immediately transported to the cellar where they were stored in the cold chamber for 24 hours. This was followed by grape selection and pneumatic pressing and decanting. The alcoholic fermentation started in a stainless steel tank with selected yeasts. After fermentation starts, the must was transferred to 500L barrels. The wine was kept in contact with fine lees. Aging for 8 months in barrels with battonage. The nose shows white fruit involved in light, very discreet smoky notes. The palate is unctuous, balanced and with a good acidity that gives it a fresh and prolonged finish. Contains sulfites.

This wine expresses the personality of the terroir od Dão wines being elaborated from the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta do Soito. Demonstrates a red with bricky nuances. It has a delicate aroma with the expression of notes of very ripe red fruits, cassis and blackberry, married with a light touch of black pepper, cocoa and vanilla. Manual harvest in 15 kg boxes. Manual selection of grapes on a sorting mat. After destemming and crushing, the different varieties are vinified individually in stainless steel vats at a controlled temperature, with maceration being considered appropriate for their characteristics. After malolactic fermentation, part of the batch aged in French oak barrels for about 20 months, and the rest in stainless steel vats. its gently floral and fruity components, and its lush and dense structure in the mouth, refreshed by the fluidity and delicacy of Alfrocheiro. A set in which the notes of French oak wood where it was aged are very well integrated. Contains sulfites.
