Grown in the Estremoz region, with strains ranging from 13 to 35 years old, the process includes fermentation in stainless steel vats and lagares, with foot treading, and a stage in French oak.

Quinta dos Cardeais Grande Reserva Red is the result of meticulous winemaking, which begins with careful stemming followed by light crushing. Pre-fermentation maceration lasts 48 hours before spontaneous fermentation in stainless steel vats at controlled temperatures, ending with post-fermentation maceration lasting 10 to 15 days. This approach ensures the ideal extraction of aromas and flavors, resulting in a wine of exceptional quality.
Made from a distinct blend of Alicante Bouschet, Cabernet Sauvignon and Petit Verdot, Grande Reserva Red displays a remarkable aromatic complexity, with nuances of ripe red fruit, blueberry compote, dried vegetables, caramel, honey cake, dates and a touch of spices. Montes Claros with the designation “Garrafeira” was elaborated from a preview of old vineyards installed in shale soils, with strict control of grape production per hectare and monitoring of the evolution of maturation in each caste and specific field. This process involved, in particular, the associated winemakers, who were extremely cared for for the production of extra quality grapes. Upon arrival at the cellar the grapes were smoothly crushed with total disgust, followed by the process of alcoholic fermentation in stainless steel, with moderate mechanics, ending in maceration for 10 days, under temperature control at 24ºC. Malolactic fermentation occurred in 1st use of 1st use of French, American and Brown Oak, which followed a 12 -month internship in the same barrels. After slight filtration, the traffic jam and a final stage of 30 months in a bottle occurred. Clear appearance and color grenade with depth. Good aromatic intensity, highlighting the notes of red fruits in jam, coffee, chocolate and spices. Soft flavor, with fruity freshness, excellent structure, slight expert and toasted astringency, with wild but soft and full -bodied tannins. The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Granit come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. The bottling takes place after the batonage and the stage in the fine lees. Citrine yellow color, aroma with the profile restrained and elegant with mineral notes and dry finish.
