After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to stainless steel fermentation tanks. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation took place for 10 days where, depending on the variety and the plot, a protocol of pumping over and deletions was carried out. After malolactic fermentation, the different components aged in 225L oak barrels for 18 months. After bottling, the wine aged for another 12 months in the bottle. It is a ruby colored wine with deep intensity. In the aroma, it is very complex, between notes of wild fruit, “sous-bois”, black fruit and balsamic freshness. In the mouth, it presents very fine and polished tannins that provide structure and finesse at the same time.
Quinta de São José Reserva Magnum Red

Grapes harvested by hand, for boxes of 25 kg, at their ideal point of maturation; intended to have a vigorous maturation, leading to higher aromatic and polyphenolic concentrations. After gentle crushing and total destemming, the grapes are fermented in stainless steel vats and wine presses, thus allowing the quality constituents present in the skins of the very ripe grapes to pass smoothly into the wine. After malolactic fermentation, the wine aged in new and used 400 liter French oak barrels for approximately 12 months. Purple and very deep in color, very complex and distinctive aromas where the fruity and floral character predominates with spicy notes, fresh from mint from very discreet wood and well integrated into the wine. In the mouth it shows fruit, complexity with high level tannins that give it a long finish. This balanced combination of power and elegance certainly contributes to its aging potential, so the wine will benefit from a few years in the bottle. Contains Sulfites.

After harvest, the grapes are collected in the cellar and sent to the cold rooms, where the temperature is controlled up to 10oC for 12 hours. The bunches are then stalked and the grapes broken. Partially fermented in frustoconical stainless steel tanks and French oak vats. After the alcoholic and malolactic fermentation, the stage partially runs for 7 months in French oak barrels of the Seguin Moreau brand (medium - fine grain), until bottling. The bottle stage occurs for at least 12 months. Contains Sulfites.
