The grapes were harvested by hand and gently pressed in a pneumatic press after the wine decant for 24 hours. 90% was fermented with temperature control and 10% in French barrels. Passadouro DOC Branco is a very elegant and fresh wine. Great expression of well-fruity fruity notes with white flowers. In the mouth we find a crunchy wine with good acidity and balanced body. Rich and long finale. Contains Sulfites.

The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% were introduced into the vat with crushing and 70% in whole bunches, which allowed the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation totally in stainless steel vats, having completed the malolactic fermentation in stainless steel. It was then aged for 75% in used 4-year-old barrels of 400L and 225L of French oak, where it remained for 12 months, with the remaining part of the batch aged in stainless steel vats. of wild fruits, in a typical Douro region with a fine cut, slightly spicy and fresh. In the mouth it is seductive, with rusticity conferred by the stems of the grapes, combined with a good minerality. Long, thin and vibrant profile. Contains sulfites.
Encoberta Red

Encoberta is the name of a small town in Penalva do Castelo (Castendo sub-region), where this wine was made with its own grapes. Vineyards aged 28 years at an altitude of 460 m with granite and clay soils are being converted to organic certification since 2020. It ferments with indigenous yeasts in French oak vats and with 35% whole bunch followed by 30 days of cuvaison. Aged for 15 months in used French oak barrels and vats. Naturally stabilized. It is a very characteristic red from Dão, from Penalva do Castelo. A little more fruity, denser and more textured than Serra da Estrela wines, black fruit and spicy notes also in the mouth. Dry, some earthy character, and a slightly tannic finish. Contains sulfites.
Quinta dos Roques Touriga Nacional Red

Of dark, bright color, the bouquet, characteristic of this variety, has notes of violets, pine needles and red fruits. Oak and chocolate notes given by the oak are present and well balanced with the fruit. The Alvarinho grapes, produced according to the concepts of organic farming where we protect the wine-growing ecosystem, promoting biodiversity and environmental sustainability, are harvested manually in the older vineyards with more than 40 years of existence in Quinta de Soalheiro, the First Vineyards. Currently, we still have a selection of Alvarinho grapes planted in Pé-franco. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation at controlled temperature. The fermentation takes place essentially in stainless steel (about 15% of the total volume is fermented in used oak barrels), with maintenance of the fine lees until the beginning of May, the month in which the bottling takes place. In this harvest we also integrate into the Alvarinho lot with a large oak kite stage. Citrine yellow color, elegant and full aroma that grows in the glass, becoming more and more persistent. The flavor is full-bodied, fresh and with great gustatory complexity.

The harvest was performed manually for small capacity boxes. After destemming the grapes, they were trampled on foot in modern temperature-controlled stainless steel presses, followed by aging in French oak barrels and prolonged aging in the bottle. Fermentation steps on foot in stainless steel tanks with temperature control. Aged for 12 months in French oak barrels. Compact ruby color, fine but powerful tannins. Collected by hand, they were trodden on foot for 2 days. At the spontaneous start of fermentation, the grapes were pressed and the must kept in clay pots. Aging for 12 months, it was made in centenary barrels of Portuguese oak and chestnut. Complex aroma, red fruit flavor in harmony with vegetable and balsamic notes, translates into a lively and precise acidity in the mouth, with a delicate and elegant texture. Contains sulfites.
