Palácio dos Távoras Bago a Bago is a field blend made from typical grapes from the Trás-os-Montes sub-region, harvested berry by berry, in a centenary vineyard without a frame, reveals the potential of such a peculiar territory. Fermentation in 500L barrels spontaneously, with manual reassembly of the masses, showing all its potential. The result is an uncomplicated and more elegant wine. Contains sulfites.

The grapes were harvested manually and transported to the cellar where they were destemmed. Alcoholic fermentation took place in a stainless steel mill at a temperature of 26–27°C. After finishing, we kept the wine in post-fermentation maceration for 5 days. The malolactic fermentation occurred naturally in a stainless steel tank and then it was transferred to barrels where it remained for 18 months. The lottery followed. Aging for 18 months in barrels and 5 years in bottle. Intense color. Aroma shows great depth and complexity, with lots of pepper and nutmeg, macerated berries and moss. In the mouth, vigorous tannins stand out, but tamed by time and solid structure. Rich and exquisite, with a lot of freshness in the endless finish. Contains sulfites.

With the most modern technology and total temperature control we eliminated curls that were not in perfect condition, the grapes were vinified with total destemming, followed by soft crushing and skin maceration for about 12 hours. After this period over an inert atmosphere the press was pressed in a penumatic press, followed by a period of clarification of the must of 24 to 48 hours depending on the variety and maturity stage. Vinification in hyper-reduction, fermentation at 12ºC and transfer under controlled atmosphere. The wines were sucessively stamped in stainless steel and French oak barrels on bottonage until bottling. Contains Sulfites.

Selection of the best lots of grapes. vinified caste by caste. The Aragonez is fermented in "vinimatics", while the remaining varieties ferment in mills equipped with mechanical step robot. "With grapes buying small parcels I make 1/2 barrels of wine and one of these wines is called the Golden Tooth, because the woman who sold me has a golden tooth." Quinta da Pellada Dente D'Ouro spent 16 months in used French oak barrels. The wine is composed of several native grape varieties, mainly Jaen and Baga. The grapes come from a very old vineyard with vineyards, which are between 80 and 100 years old. It is very important for Alvaro Castro to show that it is indeed possible to revive the tradition of blends of native fields and vines in his Dao area. The wine shines with ruby red with violet nuances. It shows a beautiful fresh and mineral scent, thin and incredibly complex, with notes of blackberry and plum. On the palate, a medium concentration, blueberry aromas, notes of spices and some earthy notes, plus unlikely silky tannins, absolutely attractive. A light red wine, elegant and very fresh, juicy, with mineral notes and berries, at a long, deep and very thin finish. Wonderfully multi-layered and with elegant precision. Simply sublime!
