Manual harvesting for 15kg boxes. Total de-stemming, without crushing the berries, after careful selection of the grapes. Spontaneous fermentation in a stainless steel press. Malolactic fermentation and aging in stainless steel tanks. Deep color, aroma of ripe wild fruits and a slight note of eucalyptus leaves with volume, good acidity and present but soft tannins, it shows surprising freshness.

After harvest, the grapes are collected in the cellar and sent to the cold rooms, where the temperature is controlled up to 10oC for 12 hours. The bunches are then stalked and the grapes broken. Partially fermented in frustoconical stainless steel tanks and French oak vats. After the alcoholic and malolactic fermentation, the stage partially runs for 7 months in French oak barrels of the Seguin Moreau brand (medium - fine grain), until bottling.
