Pacheca Grande Reserva Touriga Francesa Red

After careful selection for their best condition, the grapes were harvested to 25 kg chests and sent to the winery where they were totally destemmed. Fermentation took place during 9 days in traditional 7-ton granite stone tanks with stepping and soft reassembly for leaching by blanket and extraction of phenolic and aromatic compounds. At the end of the alcoholic fermentation, the wine was transferred to new French oak barrels where malolactic fermentation took place and aged for 18 months in French oak barrels. Rich and structured wine with notes of black fruit but, at the same time, very fresh. Contains sulfites.

Manual harvest. Manual choice of curls. Destemming without crushing the berries. The two varieties fermented together in used 500L French oak barrels where they were subjected to gentle pigeages. After an aging period of 19 months in used 500L barrels, we carry out a light gluing and subsequent bottling. The wine rested for 1 year before being marketed. Open grenat color, fragrant, exuberant aroma, a combination of aromas of red fruits and spices. Smooth attack, very silky tannins, very light with excellent freshness. Elegant. All varieties are vinified by direct pressing. Cinsault and Tibouren in stainless steel vats. Grenache & Rolle are partially vinified in tulip-shaped concrete vats with a rounded bottom. This ovoid shape gives rise to a natural convection movement that suspends the lees creating the same effect as a batonnage and gives the wine a lot of structure. It has a very clear light pink color with bluish reflections. This wine offers an elegant nose with delicate notes of grapefruit and white flowers. Fresh and balanced, the palate is lively and reveals seductive aromas of citrus fruits and marine iodine. Contains sulfites.

Grapes from non-irrigated 100% Rufete vineyards, originating in two plots of granitic soils in the parish of Vermiosa, in the heart of the Douro International Natural Park, at an average altitude of 700 meters. Partial destemming and crushing. Integral fermentation in cement vats with indigenous yeasts without temperature control. Aging for 15 months in cement eggs, 10% of this batch aged in used French oak barrels. Complex aroma with sweet vegetable notes in combination with wild fruits and spices. Mineral character and a slight earthy touch, very identifying the variety. In the mouth it is a fresh wine, with soft but well present tannins, with spicy notes and slight minerality. Careful selection of grapes in whole bunch for the cement mill where they spontaneously ferment at controlled temperature. After a maceration period of about a week, the grapes are picked and the wine continues its fermentative processes in 500 liter French and Austrian oak barrels. Aging for 24 months in French and Austrian oak barrels, followed by a year in stainless steel, where it stabilizes naturally throughout the seasons. Bottled manually, by gravity without filtering or sticking and with minimal SO2 adjustments. It is a wine with a little extracted profile, we look for the elegance and freshness that an old vineyard with exposure to the north can give us. Open ruby color, shallow, with herbal notes combined with fresh fruit on the nose, deep and persistent in the mouth, with Douro and wooden aging notes. A wine to enjoy while young, but clearly aging. Advisable for decanting. Contains Sulfites.
