The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% were introduced into the vat with crushing and 70% in whole bunches, which allowed the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation totally in stainless steel vats, having completed the malolactic fermentation in stainless steel. It was then aged for 75% in used 4-year-old barrels of 400L and 225L of French oak, where it remained for 12 months, with the remaining part of the batch aged in stainless steel vats. of wild fruits, in a typical Douro region with a fine cut, slightly spicy and fresh. In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Quinta de Santiago, built in 1899 in Monção, is still owned by its descendants. The Quinta has 9 hectares of which 6 planted with vines aged between 3 to 9 years, exclusively in clay soils. In the mouth it is dry, drying tannin, high acidity, medium alcohol, medium body, medium intensity, lime, peach, earthy, wet stone and long finish.
