After crushing, a skin maceration followed, followed by a soft pressing and a long maceration, at low temperature with sludge. Later the wort was clarified by decanting. Fermentation in French oak barrels (20% new barrels), where it remained on lees for 10 months. It has a very elegant and sober aroma, with a perfect balance between minerality, wood and fruity and floral notes. Intense and long finish of mouth. Contains Sulfites.

This Antão Vaz is fermented and aged for a long time in new French oak barrels. A rarely released wine, with a limited production and with a distinct profile from the ex-libris variety of Vidigueira. Grapes de-stemmed and fermented in a press with manual treading. Malolactic fermentation and prolonged aging for 20 months in new barrels (50%) using French oak. Wine stabilized naturally during aging in barrels. 3650 bottles were produced. Delicate aromas of ripe red fruit and light floral notes. Mediterranean bush, cedar, wood, mocha, spice and moss add aromatic complexity. In the mouth it proves to be an elegant wine, full of minerality and freshness, reflecting well the limestone soils from which it comes. These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli.
