After being selected, the grapes are stalked at the entrance of the cellar, crushed and driven to stainless steel mills with robotized steps. It is at this stage that the pre-fermentative maceration is carried out at low temperatures. Subsequently the fermentation is carried out in stainless steel tanks at a maximum controlled temperature of 28ºC. Intense deep red color with violet tones. Intense, fresh and complex aroma, dominated by ripe fruits such as blackberry, plum and cassis, some floral aromas, such as violets, and tertiary aromas from its “elevage” in barrels like spices. It has firm tannins, ripe and smooth and a balanced acidity. Contains Sulfites.

Manual harvest in 15kg boxes. Total de-stemming, without crushing the berries, after careful selection of the grapes. Spontaneous fermentation in stainless steel mills with minimal intervention. Malolactic fermentation and aging in stainless steel tanks. The Trincadeira grape variety in the Monte da Raposinha terroir made it possible to create a red wine with a low alcohol content, open color, good acidity and very soft tannins. The aroma reveals fresh red fruit and dry tobacco leaf.

Grapes from 21-year-old vines, hand-picked into 20 kg boxes. The must was obtained by the open spout method with direct pressing of whole grapes, and later decanted at low temperature for a period of 24 hours. Fermented in stainless steel vats at a temperature of 15ºC for a period of 18 days. It aged naturally in contact with fine lees for 5 months in stainless steel vats. Minimal intervention. Pale pink color that reveals a delicate rosé. It is complex and intense on the nose with notes of red fruits, floral touches and evident minerality. In the mouth it has a good volume and excellent freshness.

Grapes from vineyards planted in Beira Interior, at an average altitude of 750 meters, mostly over 40 years old in exclusively granite soils with many veins of quartz. Depending on the year, they select the best vineyards, whose native varieties are perfectly adapted to the rustic climate caused by the altitude. Alentejo and contemporary, Dom Rafael is a versatile red, ideal to accompany varied gastronomic proposals. The Dom Rafael red stalks in casks of Portuguese chestnut and oak and in French oak barrels for 12 months, after which it staged for at least another 6 months in the bottle. Over the years this is a wine that is increasingly smooth, complex and balanced. Campolargo Calda Bordaleza Red

Total destemming and separate fermentation in small mills, with mechanical step. Malolactic fermentation in partially new French Oak wood and stage up to 18 months. Dark ruby color, dense, chemical and hot aroma with palate alive, rich in red fruits, spicy, seductive in silky texture. Long end of test with very good connection between Cabernet Sauvignon and Merlot and the joy conferred by Petit Verdot.
