Discover Crosta Calcária dos Profetas White, a wine that emerges from the unique geological zone in the north of Porto Santo Island. This region, characterized by the compactness of the limestone, gives the wine a unique minerality, reminiscent of the aromas of the sea and offering a wine experience of another dimension.
Viticulture is carried out using traditional methods, with old vines, between 40 and 80 years old, planted in limestone soils, protected from strong winds by reed beds and walls. Winemaking is meticulous: after rigorous selection and staggered harvests, the grapes are pressed whole. The must is decanted into fractions without SO2, allowing pre-oxidation and spontaneous fermentation. The musts ferment on lees in stainless steel vats and barrels, where they mature for 11 months.
This wine has a pale yellow color and an intensely saline and mineral nose, with nuances of gunpowder and iodine. In the mouth, it is full and textured, echoing the aromas with a remarkable persistence. Perfect for pairing with flavors from the sea, especially scallops and clams, Crusta Calcária dos Profetas White is an invitation to explore the richness of limestone soils through a glass.

The grapes were harvested by hand into small boxes of 20 kg. The composition of the blend varies with the production of each variety in the vineyard. After total destemming, the grapes go to a small stainless steel press with temperature control, where they macerate 24h cold before the fermentation begins. Fermentation is slow, under controlled temperature, with soft pumping over. This wine aged only in stainless steel, to preserve all the natural aromas and flavors of the grapes that give rise to it. The result is an intense ruby colored wine, with notes of blackberries, currants and spices. In the mouth it is balanced and fruity and round. Contains Sulfites.

After the desired temperature, soft pressing with low pressures and fermentation of 70% in small capacity stainless steel vats with controlled temperatures and 30% in 500L French oak barrels. Aging 70% in stainless steel and 30% in 500L French oak barrels for 9 months. Clear citrus color to straw. Aromas of citrus and tropical fruit, with nuances of wood to stand out with the agitation. Mouth with aromas of tropical fruit where mango and pineapple are more evident, together with more specific aromas of honeysuckle and ripe grapefruit. This wine expresses the desire to make a Touriga Nacional from old vines. In a region where the old vineyard consists of a wide range of grape varieties mixed in the same plot. In 2009, 3,500 kg of Touriga Nacional were harvested from a single 80-year-old vineyard, which implied making a choice of Touriga Nacional grape varieties in the large set of grape varieties of that parcel. Vinification was done in a cement vat with pre- and post-fermentative maceration. Aging for 1 year in 225 liter French oak barrels. Opaque red color, aroma of red fruits with spicy notes. Full-bodied, fresh and elegant. Long aftertaste. Contains sulfites.
