The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% were introduced into the vat with crushing and 70% in whole bunches, which allowed the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation totally in stainless steel vats, having completed the malolactic fermentation in stainless steel. It was then aged for 75% in used 4-year-old barrels of 400L and 225L of French oak, where it remained for 12 months, with the remaining part of the batch aged in stainless steel vats. of wild fruits, in a typical Douro region with a fine cut, slightly spicy and fresh. In the mouth it is seductive, with rusticity conferred by the stems of the grapes, combined with a good minerality. Long, thin and vibrant profile. Contains sulfites.

Quinta D'Amares Vinesa Loureiro, fermented with partial contact with the films and aged for 4 months with battonage in French oak barrels. The oak aging gave it a greater complexity of aromas, gaining a good structure with a vibrant acidity that gives it great longevity. In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.

Charme Red

Manual Harvest, fermentation in granite wineries and barrels. Stage of 15 months in barrel. The Charme shows a brilliant bright red color with a complex aroma reminiscent of tea leaves, a mild earthy character and a hint of cherries. In the mouth, although delicate and elegant, underlies a very long assertive structure, minerality and freshness, together with the well integrated wood, resulting in a harmonious finish with soft tannins.
