Manual harvest. Total destemming. Fermentation in open barrel at low temperatures. Decantation for new and used 225L French oak barrels for 18 months. 12 months of aging in bottle before going to the market. Winemakers choose their favorite barrel to create the blend that best characterizes them. Concentrated ruby color. Complex aroma, with notes of spices and black fruit, pepper, vanilla and chocolate. Full-bodied, expressing the classic style of Dão wines. Noble tannins, good texture with great balance. Long, structured and deep finish. It will age beautifully in a bottle. Contains sulfites.

The grapes were harvested manually and transported in small boxes to the cellar where they were stored in a cold chamber at 3°C for 24 hours. They were then selected and gently pressed. The must was cold decanted (10°C) and then fermented in used French oak barrels from Burgundy. After alcoholic fermentation, the wine aged for 6 months in the same barrels with battonage and sur lie. Crystalline wine with green tones, complex and elegant aroma with notes of green apple, lime and wet stone. Flavor rich in fruit, dry and mineral. Excellent acidity.

Caementa is the wine that rescues the tradition of cement in Dão in a contemporary version. Its slow fermentation and aging in NicoVelo cement tubes resulted in a wine with pronounced, fresher and textural aromas. Made from the Tinta Roriz variety, planted at an altitude of between 400 and 500 mts, vinification in cement formats the first Taboadella Caementa Rosé in a less intrusive version, allowing for greater aromatic clarity and physical persistence without interfering with the fermentation kinetics, which enhances the genuine character of the Tinta Roriz variety and highlights the expression of this unique Taboadella terroir.

Present exclusively in the old vineyards of Serra da Estrela, and famous for its high levels of acidity, this variety was usually planted at the entrance of the vineyards - definitely not the best grape to eat. Its name says it all: Uva-Cão, the "grape that guards the vine". To the most curious and the most sensitive, a warning - the acidity of this wine is remarkable! Manual harvesting in 20 kg boxes. The grapes were destemmed and crushed, followed by cold skin contact for 18 hours. After pressing and static decanting, alcoholic fermentation took place in a stainless steel vat with controlled temperature (18 ºC) for 17 days. After the fermentation, it was aged on fine sludge for 3 months, and bâtonnage was carried out during the first month and a half. For almost 15 years, Quinta das Marias has produced 100% wine from the Encruzado variety. Encruzado is probably one of the least expressive Portuguese white varieties while young, expressing its full potential over several years in the bottle. Contains sulfites.
