Quinta do Fojo, located on the picturesque left bank of the Pinhão Valley, is the birthplace of the exceptional Quinta do Fojo Red 2017. This wine is produced exclusively from the property's vineyards, which extend over 4 hectares planted in 1986, with a mix of grape varieties where Tinta Roriz predominates.
The Mediterranean climate, combined with the schist soil and the altitude between 250m and 370m, provides the ideal conditions for the production of superior quality wine. Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.

Grapes from plot 21 of Alicante Bouschet. After de-stemming, the berries are hand-picked before crushing. 30% stems were added to the must to give more complexity and structure, which accompanied the entire fermentation. Before fermentation in stainless steel trunk-conical vats at a controlled temperature of 28ºC, maceration takes place at 10ºC for 3 days. After malolactic fermentation, the wine ages in 3000 liter French oak barrels for 12 months. The final blend is made only from the best wood and continues to age in the bottle at a controlled temperature of 15ºC. Ruby red color. Great aromatic complexity, dominated by ripe red fruit, black figs and peppers. It is a wine with strength and very fresh. It reveals a powerful and very well designed mouthfeel, it is long and the tannins are strong but silky. Contains sulfites.
