Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were picked only by grandfather Nelson and granddaughter Maria Simões. The grapes were fully destemmed and immediately pressed. This wine aged for 6 months in new French oak barrels. It has a vivid and crystalline yellowish color. The first aroma we have is well integrated barrel notes. In the wine, we have white stone fruits such as apricots and peaches that are reminiscent of the great Dão wines. Citrus fruits that give some nose freshness to the wine. It has a pleasant breadth and a large mouth volume that accompanies the tasting from the beginning to the end. It is a wine that has some bitterness at the end, characteristic of gastronomic wines that go very well with food. It has a long and persistent finish.

Fermentation takes place in truncated conical stainless steel vats, preceded by a cold maceration for 24 to 48 hours. After pressing, the wine undergoes malolactic fermentation in stainless steel and then ages in 300 liter French oak barrels for a period of 12 months. After designing the batch, it ages in the bottle for two years before being released on the market. Aroma of black fruits in jam, spice, flowers and mint. The notes of toast and dark chocolate accentuate the complexity of the wine on the nose. In the mouth it is soft, fresh, full and elegant. Aged for 18 months in new barrels and second-use barrels, with a capacity of 500 liters of French oak and 5000 liter vats. At least 3 years of aging in the bottle followed. Dense almost opaque. The grapes were harvested by caste and field, and at the time a rigorous qualitative selection was carried out. After gentle destemming and pressing, the grapes were transported by gravity to small stainless steel vats with temperature control, where they were vinified, caste to caste.
