Grapes harvested by hand in small boxes and transported to the winery located on the farm itself, the transportation time being very short. Total destemming. Very short skin maceration. Long fermentation at low temperature: 20 ° C. Total malolactic fermentation. Aging in stainless steel for 9 months followed by aging in bottle for 6 months. Young wine with a bright ruby color. Aromas of ripe wild fruits with nuances of cherry and black pepper. Fine and velvety tannins that harmoniously contrast with a well-creased and fresh acidity. The grapes, from previously selected vines and in general from vines over 30 years old, follow a strict control of maturation to determine the optimum height of manual harvesting. At the cellar, the grapes arrived in optimum conditions and the partial destemming and crushing of the grapes began, followed by fermentation and a prolonged maceration of 10 to 12 days, to extract the best aromas and all the complexity of the fruit. This was followed by malolactic fermentation, partly in stainless steel tanks and partly in wooden barrels. For greater complexity, structure and richness, the final blend selected aged 12 months in 2nd and 3rd year barrels of French and American oak, and 6 months in the bottle for final refinement. Clear appearance, deep garnet color. Rich and full aroma, showing aromas of jam, jam and cocoa. Soft, full-bodied and complex flavor, highlighted by notes of very ripe black fruits and robust, persistent tannins, which guarantee longevity. Contains sulfites.

After malolactic fermentation the wines were tranferred separately to new barrels (60%) and 4 years (40%) of French oak, where they trained for about 12 months until the final batch. After bottling, a temperature controlled stage of 15ºC is followed for 6 months in order to achieve the appropriate balance for its consumption. To preserve its great quality, it was bottled without treatment by the cold and without glue so that a slight deposit can form in the bottle. The elegance and balance of the Herdade do Peso Essência 2014 make this wine the perfect accompaniment to the tasty meat dishes of the rich Alentejo gastronomy.

These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. Produced from the carefully selected vine varieties, Alicante Bouschet eTincadeira, planted in the older vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. The grapes are then fermented separately in stainless steel vats and French oak vats, at a temperature of 27 ° C, followed by 15 day maceration.
