Aging for 6 months in French oak barrels. Selection of grapes in the cut and transport in boxes directly to the cellar. Vinification with crushing and total destemming. Fermentation in an open press with controlled temperature. Intense red color and very balanced nose and well filled with notes of wild fruits and cherries, spices and a light floral touch, on a background where the elegance of vanilla and barrel notes is evident, in the mouth it reveals a voluminous and enveloping wine , where the fruit and the spices reveal a beautiful integration and the tannins demonstrate a good firmness, showing signs of potential in the bottle, a long and persistent finish. Contains sulfites.

The grapes were harvested very early, before the painter, to ensure acidity and natural freshness. They were manually harvested into small boxes in order to preserve their quality. After careful selection and sorting at the entrance to the cellar, the grapes were destemmed and gently pressed. Fermentation took place at low temperatures in stainless steel vats. Part of the batch fermented and aged in used 500 liter barrels. Pale pink color. Fine and delicate aroma. Fermentation at a controlled temperature of 14ºC-16ºC, in a stainless steel vat with drop musts or free draining from the press. The wine remains during the short stage in stainless steel vats with its fine lees, in order to guarantee complexity and longevity of the wine. Wine from must obtained only by free draining after crushing the berries. A wine with a slightly pink color and very elegant. It presents fresh and captivating aromas, predominating wild fruits, pomegranate, as well as a light floral. Very good acidity in the mouth, in a very balanced and seductive set. These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. Then the grapes are fermented in stainless steel vats. at a controlled temperature of 16 ° C. The stage is followed on fine lees for nine months with regular batonnage. This white wine is based on the castes Antão Vaz and Arinto, have a fine aroma and a certain body, are persistent and harmonious. Contains Sulfites.

Esporão Private Selection Red: Syrah and Aragonez were fermented in small stainless steel mills, with alternating step-by-step with short manual overruns done 2-3 times per day, depending on our daily taste throughout the fermentation. We prefer to ferment the Alicante Bouschet in a small stainless steel tank and we did the reassemblies manually. The reason for this choice is that this caste has a relatively brittle film, which may lead to an exaggerated extraction of tannins. After pressing, we kept the wines separated, in order to better understand the evolution of each one. The malolactic fermentation took place in the barrels and spontaneously. 30% in new barrels and 70% in used barrels (1 year), of 225l French oak barrels (Taransaud; Saury; Boutes). After 18 months of internship, during which we only made a transfer immediately after the malolactic, we made the final lot, which was bottled on May 28, 2014, only with a slight filtration and without any type of bonding. In the nose predominates the black fruit with slight notes of smoke and spices. In the palate it shows density and richness, shows itself balanced, with good acidity and fine tannins. The ending is long and persistent. Contains Sulfites.

The grapes are chilled and then pressed in a pneumatic press. Cold decanting, followed by fermentation in temperature-controlled stainless steel barrels and vats with regular buffering up to one month before bottling. Aging 6 months in new and used French oak barrels (30% of wine) and stainless steel vats (70%), with regular bâtonnage. It is a rich and concentrated white wine, but very precisely in citrus fruit and notorious minerality. Contains Sulfites.
