Framingham Classic Riesling White
Classic Riesling is harvested largely per machine although some components, up to 25% of the blend, are handpicked. The short-term phenolic structure of skin contact that occurs during the harvesting of the machine serves to make the wine more accessible early in its life. After destemming, the must, with many berries still intact, is charged through the press door to reduce maceration. The juice is extracted at low pressures over a period of one hour. These juices were clarified by cold decanting for 2-3 days before being fermented. Ferments were carried out in stainless steel tanks with temperature control and selected batches were interrupted with some remaining residual sugar. Once the fermentation was completed, the wines were left in fermenting lees for 2-3 months, with another 7 months in clear lees, to add texture. After mixing, the wine was gently clarified and bottled in screw cap to preserve freshness, flavor and integrity. The wine has a fragrant, complex nose showing tangelo, honeysuckle, jasmine, lapsang and aromatic quinine along with notes of cream, toast and some soft damp stone. Taste intense and concentrated, but delicate, with soft but juicy acidity, showing spicy flavors. Mandarin and nectarine with notes of toast, lemon curd, citrus kernels and honey, accompanied by a stony, “mineral” finish. Some good tension between sugar and acidity.
