The resulting juice ferments in barrels with wild yeasts, adding complexity and texture. The wine matures for 11 months, with malolactic fermentation selectively used to achieve perfect balance.
On the nose, the wine is open and expressive, featuring notes of stone fruit, orchard blossoms, and subtle crème pâtissière and hazelnut. The palate is taut and vibrant, with mouthwatering citrus freshness framing a core of conference pear and white nectarine. A touch of well-integrated toasty oak merges with layers of savory texture, leading into a long and elegant finish. Grapes are carefully destemmed and placed in open-top fermenters, fermenting with wild yeasts. Some whole bunches are included to add structure, and after pressing, the wine matures in French oak barrels for 11 months.

Cloudy Bay Te Koko Sauvignon Blanc White
Cloudy Bay Te Koko Sauvignon Blanc White is a remarkable wine that ferments in French oak barrels with indigenous yeasts, gaining a unique complexity over four to five months. The wine then rests in the barrels on fine lees for 15 months, followed by blending and maturation in Cloudy Bay’s cellars.
Te Koko is initially restrained on the nose but unfolds with subtle notes of tropicality, honey, and graphite. The palate is extraordinarily complete, featuring complex layers of peach, preserved citrus, and toasted nuts. A fine line of acidity and enticing saline minerality balance the intense fruit core, providing a clean, palate-cleansing finish.

Villa Maria Private Bin East Chardonnay is fruitful in style, displaying a myriad of aromatic, including ripe peach and pear notes with underlying citrus fruits and fig-shaped characters. On the palate, these initial flavors are accompanied by a creamy, fussy texture and integrated oak. A medium bodied wine that is soft and stylish for fun now. Cloudy Bay Sauvignon Blanc White
After harvesting, the free juice was cooled for 48-72 hours prior to storage. The fermentation was carried out mainly in stainless steel tanks with a mixture of cultured yeast and wild yeast. Approximately 3% of the blend was fermented at the highest temperature in old French oak barrels and large format vats. As usual, our Sauvignon was strictly mixed, including only the strongest batches. A vibrant blend of kaffir lemon, lemon zest and aromatic nectarine blend with the brilliant scent of orange blossom. Filled with ripe citrus and flavors of stone fruits framed by an elegant and succulent acidic architecture. Contains Sulfites.

Villa Maria Private Bin Riesling White
Slow fermentation in stainless steel tanks maintains the distinct and crispy flavors of Riesling. Bright raised scents reminiscent of spring, floral scent, fresh lemon and lemon spring from the glass. The palate is light and fresh, displaying juicy apricot and mandarin flavors with a hint of ginger seasoning. This Private Bin Riesling is an off-dry style exhibiting an excellent sweetness of balanced fruit with acidity similar to the ice cream in the end.
