Puni Sole was matured for two years in first-filled Bourbon barrels in the United States and finished for another two years in some of Spain’s best Sherry Pedro Ximénez barrels. Sole means “sun” in Italian and reflects two crucial stages in sherry making. After harvesting, the grapes are dried in the strong Spanish sun, concentrating their sweetness. The wine of these grapes is aged for many years in oak casks that change frequently. This old method of maturation is called solera. The taste is distinctly sweet, with strong notes of honey and blood orange, which are opposed to the creamy flavors of walnut and spicy oak.

Balvenie Caribean Cask was matured in traditional whiskey oak barrels for 14 years, then passed to barrels that previously contained Caribbean rum. To create an ideal ending, Master Malt, David Stewart, filled American oak casks with his own mix of selected West Indian runs. When he thought the hulls were ready, the rum was replaced with 14-year-old whiskey and completed the work with the finishing touches. The result is a single malt whiskey, with a traditional and exceptional smoothness, a soft honey character, married with notes of toffee and a touch of fruits, with a warm and long finish. On the nose it has rich and creamy notes of toffee, which combine with notes of fresh fruits. Rounded palate with sweet notes of vanilla and oak and a fruity character that develops over time. Soft and persistent finish.
