After a very delicate pressing of the grapes, harvested between mid-August and the first days of September, the must fermented for 16 days in stainless steel vats at controlled temperature. The referral was carried out in a basement for 26 days at 15 ºC, followed by a 20-month bottle-aging period. Straw yellow color, aroma of citrus peel, dried flowers, light toast, butter cookie, and beeswax, among other aromatic notes of rich and complex palette. It has very fresh attack, and excellent texture. The mousse is creamy and has good taste persistence. Contains sulfites.

The Alvarinho grapes used in the Winemaking of the Sparkling Soalheiro are selected in the vines with a lower sugar concentration and fresh acidity implanted in soil of granitic origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a series of mountain ranges that allow a perfect marriage between rainfall, temperature and the number of hours of sunshine required to better ripen the grapes of the Alvarinho variety. A perfect and consistent harvest. The summer months and specifically August had moderate temperatures during the day and cold nights that favored a slow maturation and the concentration of the aromas in the grapes. The early September dry season contributed to a perfect balance in Alvarinho. By 2016, flowering occurred two weeks later than the last harvest due to little rainfall in winter. This year we started harvesting in the first week of September to maintain the refreshing profile characteristic of Soalheiro. It has citrine yellow color, fine and persistent bubble. The aroma reveals the fruit of the Alvarinho variety, denoting a good balance between acidity and alcohol. The flavor has persistence and complexity. Contains sulfites.
Ribeiro Santo Bruto White

The Arinto and Bical grapes were totally destemmed and immediately pressed in a pneumatic press. The tear wort was cooled and decanted at low temperatures for 24 hours. The fermentation took place in a stainless steel tank with a temperature control of about 16ºC, for 3 weeks. It aged only in stainless steel to preserve all the aromas of fresh fruit. The sparkling process followed the traditional bottle fermentation method, which took place in a cool cellar for nine months. Light straw color, aromas of green apple and tropical fruits. It has a citrus citricity, fine and elegant bubble. In the mouth it has good acidity, it is fresh and crunchy. Contains sulfites.
