It is vinified by open spigot, with the must placed in small 1m³ decanters where it remains for 24 to 36 hours to undergo decantation through natural precipitation. At the end of this process, the must is transferred to stainless steel tanks where it ferments, with temperature control using chilled water fall. Special care is taken to harvest grapes with the correct balance between acidity and alcohol. The base wine is turned into sparkling wine, usually in March of the following year, and in the case of the Reserva, it ages for 12 months in the cellar before disgorgement. This is a traditional method sparkling wine, fermented in bottle, with riddling done by hand on wooden pupitres. Being a brut nature, it has no added sugar in the expedition liqueur. Contains sulfites.
