Cloudy Bay Sauvignon Blanc White
After harvesting, the free juice was cooled for 48-72 hours prior to storage. The fermentation was carried out mainly in stainless steel tanks with a mixture of cultured yeast and wild yeast. Approximately 3% of the blend was fermented at the highest temperature in old French oak barrels and large format vats. As usual, our Sauvignon was strictly mixed, including only the strongest batches. A vibrant blend of kaffir lemon, lemon zest and aromatic nectarine blend with the brilliant scent of orange blossom. Alión Red
Prepared from the Tinto Fino grape variety, Alión Tinto is a truly unique wine. The grapes are harvested manually in 12 kg boxes and immediately transported to the cellar, where they are meticulously selected.
Fermentation is carried out in wooden vats with temperature control, allowing excellent extraction of polyphenols. This process gives the wine its generous color and firm structure, characteristics that define its unique personality.
After fermentation, Alión Tinto is aged for 12 to 14 months in French oak Bordeaux barrels, all new and from the most prestigious cooperages in Bordeaux. This step represents a significant investment, ensuring that each harvest benefits from the best oak.

Lothian Vineyards Chardonnay White
Harvested by hand with maximum ripeness. The fruit was pressed together with a period of contact with the skin. The fermentation was initiated in stainless steel with ambient yeast. The fermentation juice was changed by a selection of French barrique, followed by a period of battonage to strengthen the middle palate of the wine. Nine months of ripening of the barrel in the fine lees have enriched the wine and increased the wealth. Before bottling, the wine was slightly filtered to preserve its integrity. Made from 100% Chardonnay, the nose exudes ripe stone fruit, lemon zest and slices of pineapple.
