Manual harvest. Grapes from a single vine of the Encruzado variety. Total destemming and pressing. Selection of grape must and after cooling and decanting at low temperature for 24 hours. Fermentation in stainless steel vats with temperature and around 15ºC for 20 days under indigenous yeasts. This wine has no influence of aging in barrel. Crystalline in color with greenish nuances, this wine shows the authenticity of the grape variety, in a fresh and elegant way. Notes of pear and white flowers in the aroma. Casa da Passarella A Descoberta White
The mystery of the box found inside one of the walls of Casa da Passarella is finally solved. The story begins in 1942, when a box is hidden in one of the rooms of Casa da Passarella, containing a handwritten document with instructions to be opened 50 years later. The document also contained a last will: that all the values
stored in the box should be distributed ny the poor. The truth is that neither of these things happened. Only in 2010, when the Gouse suffered works, the box was found and opened. And there was nothing inside. The investigations went forward, without ever having unraveled the mystery. When resignation seemed to overcome persistence, a specialist in the unusual was called to the scene: " the box was indeed replete," explained Professor K.Noronha, "but not tangible, material things, an extraordinary essence that, reacting with the times to come, would bring happiness through wine to all who made art and profit. "Now, these times are already part of the present, and this is a double discovery". From the Dão region, Casa da Passarella A Descoberta White Wine has a rosemary aroma, saved with citrus fruits. Carm White
The grapes were vinified with total destemming, followed by gentle crushing and skin maceration for about 12h. After this period in an inert atmosphere, the pressing was done in a pneumatic press, followed by a period of clarification of the must, from 24 to 48 hours depending on the variety and the state of maturity. The alcoholic fermentation took place at a controlled temperature between 12 and 14º. The wines aged in stainless steel on fine sludge until bottling. On the nose, this harvest made it possible to obtain a very fresh wine, with citrus fruit, in harmony with light floral nuances and strong mineral notes. It has good volume in the mouth and a very long and fresh finish. It is an ideal white to accompany: fish, seafood, white meat and salads. Contains sulfites.
