This wine originated in a plot of vines of the Baga variety, subject to very careful and rigorous cultural practices, taking into account the sensitivity of this variety. The grapes were hand-picked and carefully vinified with complete maceration, in a mill with a pneumatic crusher. After malolactic fermentation, the wine aged for 18 months in 500 liter French oak barrels and then 12 months in a cement vat, benefiting from the thermal inertia of this, as has always been a tradition in our house, to guarantee the natural stability of the wine. It was bottled, without being subjected to any clarifying or stabilizing treatment, and then aged in the bottle for 3 years. Ruby color, very fine and elegant, with notes of resins, pine needles, black fruits, dried figs, hay and spices, typical of the variety and complexed by nuances of wood. In the taste, the freshness, structure and olfactory-gustatory persistence stand out. In the mouth, the same aromatic sensations of direct nasal olfaction are perceived. Tannins present but tamed. Very suitable for bottle aging. Contains sulfites.

Crushing with destemming and cooling of the grapes in the winery in small open wineries (a tank in which the grapes are squeezed, reducing them to liquid). Where the skin maceration begins and later the fermentation, without addition of enzymes and yeasts. The step is done manually with wood masses to increase a greater extraction of the vinous characteristics of the Baga variety. Contains Sulfites.
Carm Grande Reserva Red
Total destemming, gentle crushing and thermal shock, followed by a period of cold pre-fermentative maceration in the mill for about 12 to 24 hours. Malolactic fermentation occurred naturally, part of the wine carried out this fermentation in wood. On the nose, very fresh and intense where the notes of wild fruits and black cherries predominate in balance with seductive “nuances of Liquorice”, the aroma being complexed by the notes of wood. In the mouth it is concentrated, warm, with firm tannins and smooth texture, a very intense and persistent finish showing the strength of Douro Superior wines. Contains sulfites.

The grapes were vinified respecting all their nature, vinification was done by hand, without pump, natural and minimal yeast extraction. Quinta da Pellada Jaen is very intense and bright colors. The aroma shows great complexity, with aromas of plums and red fruits. Very elegant on the palate with great structure, firm fresh and velvety tannins. It is subtle, with intense fruit flavors and impressive acidity. Contains Sulfites.

Crushing with total destemming, soft pneumatic pressing, natural static clarification and alcoholic fermentation at 18ºC. Sparkling by the classical method. Maturation: 48 months in basement and 3 months after degorgement. Tasting Notes: Crystalline with a persistent thin bubble and abundant crown, with citrine color defined. Complex, intense in dried fruits, biscuit, toasted cereal, toasted cereal and jelly of fruits of white pulp. Fruity, fresh, crispy sui generis mousse and long persistence. Produced with the Touriga Nacional, Alfrocheiro and Tinta Roriz varieties. Intense aromas of wild fruits and spices, expressing in the mouth all its austere profile, with a velvety finish. Crushing with total destemming, prolonged and smooth skin maceration, alcoholic fermentation at 26 ° C. 9 months in French oak barrels and 2 months in bottle. Contains Sulfites.

Selection of the best lots of grapes. vinified caste by caste. The Aragonez is fermented in "vinimatics", while the remaining varieties ferment in mills equipped with mechanical step robot. The process proceeds at a controlled temperature of 25ºC. Thanks to submergence gained body, youth and structure, becoming more aromatic, with a more violaceous and without oxidation. Maintaining its classic style, Quinta da Bacalhôa 2014 presents aromas of well-preserved red fruits combined with nuances of wood and spices. Yellow color with greenish tones very attractive. On the nose, the aroma of citric flowers, white plum and some peach stands out.
