As hand-vindicated grapes for small boxes of 25 Kg, according to a judicious selection of melhores na vinha grapes. As completely ungagged grapes for small stainless steel tanks. The fermentation lasted about 15 days with controlled temperature and soft remontagens for a boa extraction of heart and aromas. After a malolactic fermentation, it is aged for 12 months in French (80%) and American (20%) barrels of carvalho and batchwise, to balance varietal fruit and complex carvalho. It appears as an intense ruby color. Very fine and delicate without aroma, prevailing with notes of bergamot and vermelho fruits. On the palate it is well-integrated with notes from the oak barrels that are perfectly integrated, always enhancing the chaste floral notes to show the virtues of this specific terroir that gives it great complexity and longevity. Count me sulfites.

Cloudy Bay Sauvignon Blanc White

After harvesting, the free juice was cooled for 48-72 hours prior to storage. The fermentation was carried out mainly in stainless steel tanks with a mixture of cultured yeast and wild yeast. Approximately 3% of the blend was fermented at the highest temperature in old French oak barrels and large format vats. As usual, our Sauvignon was strictly mixed, including only the strongest batches. A vibrant blend of kaffir lemon, lemon zest and aromatic nectarine blend with the brilliant scent of orange blossom. Filled with ripe citrus and flavors of stone fruits framed by an elegant and succulent acidic architecture. Contains Sulfites.

Sylvius Gin comes from the former Dutch distillery Onder de Boompjes de Schiedam. This gin is a tribute to Dr. Franciscus Sylvius who was the name of the giver of Genievre around 1650. At the same time, Onder de Boompjes began to shoot gin. This gin also uses the herbs and spices that were available at the time, namely: star anise, licorice, cinnamon, cumin and lavender.
