Base wine produced from rigorously selected grapes harvested in the ideal maturation stage for production of a sparkling wine. Fermentation at controlled temperature, carried out in French oak barrels. Stage sore fine rubs for 6 months with periodic batonnage. Second fermentation in bottle by the classic method, followed by stage on sludge and intermediate batonnages during 5 years, in the cellars of the Cartuxa Monastery. Contains sulfites.

The Sparkling Soalheiro Espumante Bruto Barrica ferments and stews in used oak barrels for 12 months before the second fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low and constant temperature for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho variety in a perspective of greater complexity and less fruit. The elaboration of a sparkling wine from the Alvarinho grape variety demands a careful selection of the grapes. Our tradition was based on the neutral fermentation in stainless steel to obtain the base wine with more fruit intensity. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us. It has an intense yellow color, a fine, persistent bubble. The aroma reveals tertiary and vanilla aroma, denoting a good balance between acidity and alcohol. The taste presents persistence, complexity, but at the same time elegance. Contains sulfites.

Alcoholic fermentation in marble presses. Malolactic fermentation in concrete vats followed by aging for 1 year in new French oak barrels. Deep color, dark red and purple. Aromas of blueberry, blackberry and plum; some violet floral notes with subtle oak toast. Taste the dense fruit on the palate; velvety, long, complex and persistent. Contains Sulfites.
